We are members of a winter CSA and split the share with a friend of ours, which has worked out great. Most weeks we split it nearly 50/50, with Katie taking the food we don't like and we take the food she doesn't like or can't eat. The best part has been farm fresh eggs - and this week was two dozen, so we each got a dozen. I get to work on Friday and get ANOTHER dozen of farm eggs from one of my colleagues. That's a lot of eggs for a family of three. Luckily Lilly loves eggs, so we know she can at least do her part to help get through them.
Last night I was in the mood to cook (we had leftovers for dinner). I figured I should do something with the multitude of eggs we had. I don't like the crusts of quiche, so after Lilly went down I quick Googled (do you capitalize a proper noun that has been turned into a verb? A proper verb?) crustless quiches, skimmed a few recipes, then came up with my own based on ingredients we had and leftovers that needed to be used up. I baked it and we simply reheated it this morning for breakfast. It was delicious!
Ingredients (I measured nothing, all are estimates):
broccoli, probably about 1/2 cup
sun dried tomatoes (from our CSA), quartered, about 2-3 tablespoons
leftover oven fries (made from potatoes from our CSA), about 2-3 tablespoons
1 small red onion (also from our CSA)
3 strips of fake bacon
5 delicious farm eggs
1/2 cup or so of milk
swiss cheese and cheddar cheese (I did about 3 passes of swiss on the cheese grater and about 4 of the cheddar)
olive oil
oregano, garlic powder, salt, and pepper to taste
Directions:
1. Preheat the oven to 350 degrees. Spray a pie plate with cooking oil.
2. Chop up broccoli, red onion, potatoes, sun dried tomatoes, sprinkle with seasonings (oregano and garlic) and saute in a frying pan until softened
3. Mix the eggs, cheese, and milk together. Add salt and pepper to your liking.
4. Cook the facon*
5. Chop up the facon and put into the cooking dish. Arrange all veggies and such on the bottom of the pan. Pour in the milk, egg cheese combo.
6. Bake at 350 degrees for about 30 minutes, or until the top is brown and the egg has been cooked thoroughly.
Enjoy!
*(I have found it particularly difficult to master cooking facon in the microwave, but I think I have a fairly good method now. Flick water on a paper towel (it is important to have the paper towel be somewhere between dry and damp). Arrange 6 strips of facon on the paper towel. Place in the microwave. Set cook time for 2 minutes, reduce power from 10 to 7. Usually it cooks up crispy but not burnt.)
